{"id":1184,"date":"2013-06-07T01:23:29","date_gmt":"2013-06-07T01:23:29","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/curryanyveg.html"},"modified":"2022-03-01T21:53:47","modified_gmt":"2022-03-01T21:53:47","slug":"curryanyveg","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1184","title":{"rendered":"Any Vegetable Curry"},"content":{"rendered":"<p>2 onions, chopped<br \/>\n1 green pepper, chopped<br \/>\n1 cup <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n1 tablespoon curry powder<br \/>\npinch cayenne, to taste<br \/>\n6-8 cups vegetables (choose at least two and as many as you like, such as cauliflower, broccoli, green beans, sweet potatoes, carrots, peas, zucchini, yellow squash, etc.), cut in bite-size pieces<br \/>\n1\/2 cup golden raisins<br \/>\n1 16-ounce can chick peas<br \/>\n1 cup plain yogurt<br \/>\nCooked brown rice or other whole grains of your choice<br \/>\nLime wedges<br \/>\nBottled mango chutney<\/p>\n<p>Cook onions, green pepper and spices in the bouillon to soften, about 5 minutes. Stir in the longer-cooking vegetables (potatoes, carrots, etc.), return the pot to boiling, reduce the heat and simmer 10-15 minutes. Add the shorter-cooking vegetables, raisins and chickpeas and cook 5-10 minutes more, or until all the vegetables are tender. Just before serving, stir in the yogurt.
