{"id":1185,"date":"2013-06-07T01:24:45","date_gmt":"2013-06-07T01:24:45","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/basquebeans.html"},"modified":"2013-06-07T01:24:45","modified_gmt":"2013-06-07T01:24:45","slug":"basquebeans","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1185","title":{"rendered":"Basque Beans"},"content":{"rendered":"<p>2 onions, chopped<br \/>\n6 cloves garlic, chopped<br \/>\n3 stalks celery, sliced 1\/4&#8243; wide<br \/>\n2 teaspoons oregano<br \/>\n2 teaspoons fennel seeds<br \/>\n2 cups bouillon<br \/>\n1 cup red wine (optional)<br \/>\n2 cups baby carrots<br \/>\n4 medium potatoes, cut in 1\/2&#8243; chunks<br \/>\n1 cup Italian plum tomatoes, broken up<br \/>\n2 tablespoons Dijon style mustard<br \/>\n1 teaspoon liquid smoke flavoring, to taste<br \/>\n1 teaspoon minced fresh rosemary, or 1\/4 teaspoon dried rosemary (optional)<br \/>\ngenerous pinch cayenne, to taste<br \/>\n1 15-ounce can white beans or pink beans, undrained<br \/>\n1 cup soy burger, or vegetable burgers broken into small pieces<br \/>\nFreshly ground black pepper, to taste<br \/>\nChopped parsley for garnish (optional)<br \/>\nCooked whole grains of your choice<\/p>\n<p>Cook the onions, garlic, celery and spices in 1\/2 cup of the bouillon to soften, about 5 minutes. Add the remaining bouillon, wine, carrots, potatoes, tomatoes and remaining seasonings. Bring to a boil, reduce the heat and simmer 15-20 minutes or until the carrots and potatoes are tender. Add the beans and &#8220;burger&#8221; and cook 5-10 minutes more.
