{"id":1186,"date":"2013-06-07T01:27:43","date_gmt":"2013-06-07T01:27:43","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/recipe23.html"},"modified":"2013-06-07T01:27:43","modified_gmt":"2013-06-07T01:27:43","slug":"recipe23","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1186","title":{"rendered":"Black Beans from Scratch"},"content":{"rendered":"<p>    1 pound dried black beans<br \/>\n    2 onions, chopped<br \/>\n    1 bay leaf<br \/>\n    2 cloves garlic, minced<br \/>\n    1 28-oz. can plum tomatoes, cut in pieces<br \/>\n    4 t. bouillon granules<br \/>\n    2 t. tabasco sauce, or to taste<br \/>\n    2 t. cumin<br \/>\n    2 T. chili powder<br \/>\n    2 carrots, chopped<br \/>\n    2 stalks celery, chopped<br \/>\n    1 orange, quartered (unpeeled)<br \/>\n    1\/2 cup chopped Italian parsley<br \/>\n    Cooked brown rice (optional)<\/p>\n<p>De-gas and soak the beans overnight. Drain and rinse. Cover the beans with water (1&#8243; over the beans) in a large pot, bring to a boil and simmer 1 hour. Add the remaining ingredients except the parsley and simmer for 1 1\/2 hours or until the beans are tender, adding more water if needed. Remove bay leaf and orange quarters and serve over brown rice; sprinkle with parsley.<\/p>\n<p>6-8 servings<br \/>\nThis is a good basic recipe for cooking dried beans, to be used in many ways. Serve them over brown rice, accompanied by a green salad. Fill pita bread with beans and top with chopped lettuce and tomato.
