{"id":1200,"date":"2013-06-07T02:14:02","date_gmt":"2013-06-07T02:14:02","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/pepperpot.html"},"modified":"2020-05-19T00:33:00","modified_gmt":"2020-05-19T00:33:00","slug":"pepperpot","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1200","title":{"rendered":"Pepper-Potato Casserole"},"content":{"rendered":"<p>1 large onion, chopped<br \/>\n3 cloves garlic, minced<br \/>\n3 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n1 red bell pepper, cut in 1&#8243; chunks<br \/>\n1 green bell pepper, cut in 1&#8243; chunks<br \/>\n4 medium red potatoes, cut in 1\/2&#8243; cubes<br \/>\n1 28-ounce can Italian plum tomatoes, undrained, broken up<br \/>\n1 teaspoon dried thyme<br \/>\npinch cayenne, to taste<br \/>\njuice of one lemon<br \/>\n1\/4 cup chopped Italian parsley<br \/>\n1\/4 cup sliced black olives (optional)<br \/>\n<a href=\"https:\/\/drmirkin.com\/recipes\/SpiceBlends.html\">Harissa<\/a> sauce or bottled hot sauce, to taste (optional)<br \/>\nCooked barley or other whole grains of your choice<\/p>\n<p>Bring the bouillon to a boil in a large pot, add the onions and garlic, reduce the heat and simmer until they are soft, about 5 minutes. Add the peppers, potatoes, thyme and cayenne. Return to a boil, reduce the heat and simmer, covered, about 20 minutes or until the potatoes are tender. Stir in the lemon juice, parsley and olives. Taste, and if you want a little more heat, stir in a TINY bit of Harissa sauce (it is very hot.) Serve over barley or other cooked whole grains.
