{"id":1215,"date":"2013-06-07T02:44:02","date_gmt":"2013-06-07T02:44:02","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/currysweet.html"},"modified":"2013-06-07T02:44:02","modified_gmt":"2013-06-07T02:44:02","slug":"currysweet","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1215","title":{"rendered":"Sweet Potato Curry"},"content":{"rendered":"<p>1 large onion, chopped<br \/>\n2 cloves garlic, minced<br \/>\n3 medium sweet potatoes, scrubbed and cut in 1&#8243; cubes (peeled if you wish)<br \/>\n4 green bananas, peeled and cut in 1\/2&#8243; slices<br \/>\n1 stalk of lemon grass, sliced lengthwise and crushed (optional)<br \/>\n3 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n1 tablespoon curry powder<br \/>\n1 teaspoon paprika<br \/>\n1 teaspoon cinnamon<br \/>\n2 cups cut green beans or peas, frozen or fresh<br \/>\n1 cup light coconut milk or plain yogurt<br \/>\n1\/4 cup chopped cilantro (optional)<br \/>\nCooked barley or other whole grain of your choice<\/p>\n<p>Combine the onion, garlic, sweet potatoes, bananas, lemon grass, bouillon and spices in a large pot. Bring to a boil, reduce the heat and simmer, uncovered, 30-40 minutes or until the sweet potatoes are tender. Remove the lemon grass. Stir in the green beans or peas and simmer until they are tender (About 5 minutes for the beans, about 2 minutes for the peas.) Stir in coconut milk, soy milk or yogurt and the cilantro.
