{"id":1217,"date":"2013-06-07T02:46:45","date_gmt":"2013-06-07T02:46:45","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/recipe11.html"},"modified":"2021-09-28T17:58:47","modified_gmt":"2021-09-28T17:58:47","slug":"recipe11","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1217","title":{"rendered":"Tagine with Pumpkin &#038; Vegetables"},"content":{"rendered":"<p>2 onions, chopped<br \/>\n2 green peppers, chopped<br \/>\n1 large clove garlic, minced<br \/>\n2 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n3 cups pumpkin or winter squash chunks (1&#8243; or so), peeled<br \/>\n2 medium red-skinned potatoes, cut in 1\/2&#8243; pieces<br \/>\n3 cups cauliflower florets<br \/>\n4 carrots, diced<br \/>\n1 Granny Smith or other green apple, cut into 1\/2&#8243; pieces<br \/>\n1\/2 cup dried apricots, quartered if large<br \/>\n1 28-ounce can Italian plum tomatoes, broken up<br \/>\n1 teaspoon turmeric<br \/>\n1\/2 teaspoon <a href=\"https:\/\/drmirkin.com\/recipes\/spiceblends.html\">harissa<\/a> (or to taste)<br \/>\n1 16-ounce can chick peas<br \/>\njuice of one lemon<br \/>\ncooked couscous or whole grains of your choice<\/p>\n<p>Cook onions, green peppers and garlic in the bouillon to soften, 5-10 minutes. Add remaining ingredients as they are chopped and the spices and cook 20-30 minutes, or until the pumpkin or squash is tender, adding more bouillon if needed. Stir in chick peas and lemon juice and serve over couscous or the whole grains of your choice.
