{"id":1223,"date":"2013-06-07T03:22:56","date_gmt":"2013-06-07T03:22:56","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/catfish.html"},"modified":"2020-05-12T19:04:28","modified_gmt":"2020-05-12T19:04:28","slug":"catfish","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1223","title":{"rendered":"Catfish Gumbo"},"content":{"rendered":"<p>1 large onion, chopped<br \/>\n4 cloves garlic, minced<br \/>\n1 green pepper, chopped<br \/>\n2 stalks celery, sliced<br \/>\n6 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n1 28-ounce can Italian plum tomatoes, undrained, broken up<br \/>\n2 teaspoons oregano<br \/>\npinch cayenne, or to taste<br \/>\n3 cups okra or green beans, cut in bite-size pieces<br \/>\n(or use both &#8212; fresh or frozen)<br \/>\n1 pound catfish fillets (or any other fish of your choice), cut in 1&#8243; pieces<br \/>\n1 cup frozen corn<br \/>\n1\/4 cup chopped Italian parsley (for garnish)<br \/>\nCooked whole grains of your choice (optional)<br \/>\nHot pepper sauce (optional)<\/p>\n<p>Bring 1\/2 cup of the bouillon to a boil and cook the onion, garlic, pepper and celery for 5 minutes to soften. Add the remaining bouillon, tomatoes and spices, bring to a boil and cook 5-10 minutes. Stir in the okra or green beans and simmer 5 minutes. Return the soup to boiling and stir in the catfish. Reduce the heat and simmer 5 minutes, or until the fish is opaque and the vegetables are tender. Stir in the corn. Serve the gumbo over a mound of whole grains and garnish with the parsley.
