{"id":1224,"date":"2013-06-07T03:23:52","date_gmt":"2013-06-07T03:23:52","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/cioppino.html"},"modified":"2022-01-25T15:38:50","modified_gmt":"2022-01-25T15:38:50","slug":"cioppino","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1224","title":{"rendered":"Cioppino"},"content":{"rendered":"<p>2 large onions, chopped<br \/>\n4 cloves garlic, minced<br \/>\n2 green peppers, chopped<br \/>\n2-3 jalapeno peppers, seeded and chopped, to taste<br \/>\n3 stalks celery, chopped<br \/>\n2 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n1 28-ounce can Italian plum tomatoes, undrained, broken up<br \/>\n1 6-ounce can tomato paste<br \/>\n1 tablespoon Italian spice blend or oregano<br \/>\n3 small zucchini, halved lengthwise, then cut in \u00bc&#8221; slices<br \/>\n3 pounds (total) seafood &#8212; your choice: shrimp, squid, any firm white fish cut in 1&#8243; chunks, clams, mussels, scallops, etc.<br \/>\n\u00bd cup chopped Italian (flat) parsley<br \/>\nfreshly ground black pepper, to taste<br \/>\ncooked whole grains of your choice (optional)<\/p>\n<p>Combine the onions, garlic, peppers, celery and bouillon or wine in a large pot. Bring to a boil, reduce the heat and simmer, covered, 10-15 minutes. Stir in the tomatoes, tomato paste and spice blend and cook 10 minutes more. Add the zucchini. Return the liquid to a boil and add the seafood. Cover the pot, reduce the heat and cook, stirring once or twice, until the seafood is done (5-10 minutes.)
