{"id":1239,"date":"2013-06-07T03:45:09","date_gmt":"2013-06-07T03:45:09","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/southwest.html"},"modified":"2021-03-22T23:44:40","modified_gmt":"2021-03-22T23:44:40","slug":"southwest","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1239","title":{"rendered":"Southwest Paella"},"content":{"rendered":"<p>1 large onion, chopped<br \/>\n2 red bell peppers, cut into 1\/2&#8243; chunks<br \/>\n2 garlic cloves, minced<br \/>\n2 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n2 tablespoons mild chili powder<br \/>\n2 teaspoons oregano<br \/>\npinch cayenne, to taste<br \/>\n1\/2 pound spicy Italian sausage (poultry, seafood or meat), optional<br \/>\n1 28-ounce can crushed Italian plum tomatoes<br \/>\n1 pound cleaned squid, cut in 1\/4&#8243; rings<br \/>\n1 pound tuna or swordfish steak, cut in bite-size pieces<br \/>\n1 pound peeled shrimp<br \/>\nOR use ANY combination of seafood of your choice (3 pounds total)<br \/>\n6 cups cooked brown rice, barley or other whole grains<br \/>\n3 cups frozen peas (or use a peas-and-carrots mixture)<\/p>\n<p>Cook the onion, red bell pepper and garlic in a little of the bouillon to soften, 5-10 minutes. Add the remaining bouillon, seasonings, sausage and tomatoes. Bring to a boil, reduce the heat and simmer, covered, about 10-15 minutes. Remove the sausage, slice it in 1\/4&#8243; pieces, and return it to the pot. Add the seafood, cover and cook 5-10 minutes more, until the seafood is opaque.
