{"id":1259,"date":"2013-06-07T22:27:48","date_gmt":"2013-06-07T22:27:48","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/fallminestrone.html"},"modified":"2013-06-07T22:27:48","modified_gmt":"2013-06-07T22:27:48","slug":"fallminestrone","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1259","title":{"rendered":"Fall Minestrone"},"content":{"rendered":"<p> 1\/4 cup olive oil<br \/>\n1 large onion, chopped<br \/>\n3 cloves garlic, minced<br \/>\n1 red bell pepper, chopped<br \/>\n6 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a> or water<br \/>\n1 cup chopped carrots<br \/>\n2 medium zucchini or yellow squash, cut in 1\/2&#8243; chunks<br \/>\n1 cup fresh or frozen corn kernels<br \/>\n1 cup fresh or frozen green beans, in 1&#8243; pieces<br \/>\n1 28-ounce can Italian plum tomatoes, broken up<br \/>\n2 teaspoons oregano<br \/>\npinch cayenne pepper, or to taste<br \/>\n1 16-ounce can chick peass<br \/>\n1\/2 cup Italian parsley, chopped<br \/>\n1\/2 cup fresh basil, chopped<br \/>\nFreshly ground black pepper<br \/>\nGrated parmesan or romano cheese (optional)<\/p>\n<p>Heat the oil in a large soup pot; add the onions, garlic and red pepper and cook, stirring frequently, for about 5 minutes or until the onions are soft. Add the bouillon or water, carrots, zucchini, corn, green beans, tomatoes, oregano and cayenne. Bring the soup to a boil, reduce the heat and simmer about 15 minutes, or until the carrots and beans are tender. Stir in the chick peas, parsley and basil, and cook about 5 minutes more.
