Start with any lettuce or salad greens you like, and add ANY other ingredients from the <a href=\"http:\/\/www.amazon.com\/exec\/obidos\/ASIN\/B07VCMLLGY\/ref=nosim\/drmirkincom\"><em>Good Food Book<\/em><\/a>: vegetables, fruits, whole grains, beans and more. Try to get several different bright colors in the bowl, such as something red, orange or yellow. Here&#8217;s just one example:<\/p>\n<p><em>For the dressing:<\/em><br \/>\n1\/4 cup of olive oil<br \/>\n2 tablespoons balsamic vinegar, rice vinegar or other vinegar of your choice<\/p>\n<p>Mix in a bottle or refrigerator container with a tight fitting lid. Shake just before using. If desired, make a larger quantity to have on hand; keeps well.<\/p>\n<p><em>For the salad:<\/em><\/p>\n<p>2 Romaine lettuce hearts, sliced crosswise into 1\/2&#8243; strips<br \/>\n1 10-ounce box small cherry tomatoes<br \/>\n1 6-ounce jar marinated artichoke hearts, drained<br \/>\n1 ripe avocado, cut in bite-size chunks<br \/>\n1 red bell pepper, cut into strips<br \/>\n1 3-ounce can red salmon, drained and broken into chunks<br \/>\n1\/4 cup shredded Romano or Parmesan cheese<br \/>\n1 teaspoon Italian spice blend, or any other seasoning of your choice, to taste<\/p>\n<p>Toss all ingredients together in a salad bowl with a few tablespoons of the dressing, and serve.<\/p>\n<p>2-3 servings<\/p>\n<p>That&#8217;s just one of endless possible combinations. Start with 3-4 cups of salad greens per person.
