{"id":1322,"date":"2013-06-08T03:31:03","date_gmt":"2013-06-08T03:31:03","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/recipe15.html"},"modified":"2020-08-18T00:47:35","modified_gmt":"2020-08-18T00:47:35","slug":"recipe15","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1322","title":{"rendered":"Sushi Salad"},"content":{"rendered":"<p><em>For the dressing or dipping sauce:<\/em><br \/>\n1 teaspoon prepared wasabi, OR<br \/>\n1 teaspoon powdered wasabi mixed with a little water to make a paste<br \/>\n1\/4 cup soy sauce, or to taste<\/p>\n<p>Combine these ingredients and set aside.<\/p>\n<p><em>For the salad:<\/em><br \/>\n3 cups cooked brown rice or barley<br \/>\n1\/2 cup rice wine vinegar, or to taste<br \/>\n1 cucumber, cut in 1\/2&#8243; dice<br \/>\n8 radishes, chopped or sliced thin<br \/>\n1 cup frozen peas<br \/>\n1 ripe avocado, peeled and cut in 1\/2&#8243; chunks<br \/>\n1 bunch green onions, sliced (white part only)<br \/>\n1\/2 pound cooked shrimp, cut into small pieces<br \/>\n1\/2 pound surimi (fake crab), in 1\/2&#8243; pieces<br \/>\nor use 1 pound of any cooked seafoods you like<br \/>\n1 tablespoon minced fresh ginger<br \/>\n1 tablespoon sesame seeds<br \/>\nFresh spinach leaves or leaf lettuce<\/p>\n<p>Combine all ingredients except the spinach or lettuce leaves in a bowl and chill until ready to serve.<\/p>\n<p><em>To serve:<\/em><br \/>\n1) Let each diner wrap bite-size portions of the salad in the spinach or lettuce leaves and dip in the dressing\/dipping sauce, OR<\/p>\n<p>2) Serve the salad on a bed of spinach or lettuce leaves and let diners stir in a little of the dressing\/dipping sauce to their own taste (wasabi is horseradish-hot and the soy sauce is salty.)<\/p>\n<p>4-6 servings<\/p>\n","protected":false},"excerpt":{"rendered":"<p>For the dressing or dipping sauce: 1 teaspoon prepared wasabi, OR 1 teaspoon powdered wasabi mixed with a little water to make a paste 1\/4 cup soy sauce, or to taste Combine these ingredients and set aside.
