{"id":1325,"date":"2013-06-08T03:34:01","date_gmt":"2013-06-08T03:34:01","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/sweetpinesalad.html"},"modified":"2021-03-07T16:34:15","modified_gmt":"2021-03-07T16:34:15","slug":"sweetpinesalad","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=1325","title":{"rendered":"Sweet Potato Salad with Pineapple"},"content":{"rendered":"<p>2 large sweet potatoes, peeled and cut into 1\/2&#8243; cubes<br \/>\n2 stalks celery, diced<br \/>\n1 red bell pepper, diced<br \/>\n1 bunch green onions, white part, sliced<br \/>\n1 cup fresh or canned pineapple, cut into 1\/2&#8243; tidbits<br \/>\n1 cup cooked, chilled barley (see note)<br \/>\n1 cup mayonnaise or plain yogurt, or to taste<br \/>\n1\/4 cup bottled mango chutney (optional &#8211; in the international section of your supermarket)<br \/>\n1\/4 cup chopped fresh mint leaves or flat (Italian) parsley leaves (optional)<\/p>\n<p>Cook the sweet potato cubes until they are just tender: cook them in a pot of boiling water for about 5 minutes, or microwave for a few minutes until they are as soft as you like. Rinse under cold water to stop the cooking; drain.<\/p>\n<p>Combine the sweet potato cubes with the remaining ingredients.
