{"id":302,"date":"2013-06-07T01:22:00","date_gmt":"2013-06-07T01:22:11","guid":{"rendered":"https:\/\/drmirkin.com\/2013\/06\/07\/algerian\/"},"modified":"2013-06-07T01:22:00","modified_gmt":"2013-06-07T01:22:11","slug":"algerian","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=302","title":{"rendered":"Algerian Vegetable Casserole"},"content":{"rendered":"<p>\n\t3 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n\t2 onions, chopped<br \/>\n\t3 cloves garlic, minced<br \/>\n\t1 red bell pepper, chopped<br \/>\n\t2 red potatoes, diced<br \/>\n\t1 small sweet potato, diced<br \/>\n\t1 28-ounce can plum tomatoes, cut in pieces<br \/>\n\t1\/2 cup golden raisins<br \/>\n\t1\/4 teaspoon <a href=\"https:\/\/drmirkin.com\/recipes\/SpiceBlends.html\">harissa<\/a>, or bottled hot sauce, to taste<br \/>\n\t2 small zucchini, sliced<br \/>\n\t1 6-ounce jar marinated artichoke hearts, drained<br \/>\n\t1 16-ounce can chick peas, undrained<br \/>\n\t1\/4 cup chopped Italian parsley<br \/>\n\tJuice of one lemon<br \/>\n\tFreshly ground black pepper<br \/>\n\tCooked quinoa or other whole grains (optional)<\/p>\n<p>\n\tPlace the onions, garlic and red pepper in 1\/2 cup of bouillon in a large pot, bring to a boil and simmer for 5 minutes. Add the remaining bouillon, potatoes, sweet potato, tomatoes, raisins and harissa and simmer 15 minutes. Add the zucchini, artichokes and chick peas and cook an additional 5 minutes. Stir in parsley and lemon juice. Serve in a soup bowl, spooned over cooked whole grains, if desired.
