{"id":304,"date":"2013-06-07T01:33:00","date_gmt":"2013-06-07T01:33:51","guid":{"rendered":"https:\/\/drmirkin.com\/2013\/06\/07\/castaway\/"},"modified":"2013-06-07T01:33:00","modified_gmt":"2013-06-07T01:33:51","slug":"castaway","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=304","title":{"rendered":"Castaway Stew"},"content":{"rendered":"<p>\n\t2 onions, chopped<br \/>\n\t2 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n\t3 sweet potatoes, cut in 1\/2&quot; dice<br \/>\n\t1 small head cabbage, cored and shredded<br \/>\n\t2 tablespoons minced fresh gingerroot<br \/>\n\t1-2 jalapeno chiles, seeded and minced, or bottled hot pepper sauce, to taste<br \/>\n\t1 28-ounce can Italian plum tomatoes, undrained, broken up<br \/>\n\t2 cups baby lima beans (fresh or frozen)<br \/>\n\t1 cup pineapple tidbits (fresh or canned)<br \/>\n\tJuice of 1 lime<br \/>\n\t1\/4 cup chopped cilantro or Italian parsley<br \/>\n\tCooked <a href=\"https:\/\/drmirkin.com\/nutrition\/N236.html\">whole grains<\/a> of your choice (optional)<\/p>\n<p>\n\tCook the onions in 1\/2 cup of the bouillon to soften, about 5 minutes (or saute them in a little olive oil if desired). Add the remaining bouillon, sweet potatoes, cabbage, gingerroot, chiles, tomatoes and limas. Bring to a boil, reduce the heat and simmer, covered, about 10 minutes or until the sweet potatoes are just tender. Stir in the pineapple, lime and cilantro or parsley.
