{"id":309,"date":"2013-06-07T02:06:00","date_gmt":"2013-06-07T02:06:17","guid":{"rendered":"https:\/\/drmirkin.com\/2013\/06\/07\/mexstew\/"},"modified":"2013-06-07T02:06:00","modified_gmt":"2013-06-07T02:06:17","slug":"mexstew","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=309","title":{"rendered":"Mexican Vegetable Stew"},"content":{"rendered":"<p>\n\t3 tablespoons olive oil<br \/>\n\t2 onions, sliced<br \/>\n\t1 sweet red pepper, cut in strips<br \/>\n\t1 green pepper, cut in strips<br \/>\n\t2 cloves garlic, minced<br \/>\n\t2 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n\t1 teaspoon ground cumin<br \/>\n\t1 tablespoon fresh oregano or 1 teaspoon dried<br \/>\n\t1\/2 teaspoon fennel seeds<br \/>\n\t1\/4 teaspoon red pepper flakes or hot pepper sauce, to taste<br \/>\n\t2 medium red potatoes, diced<br \/>\n\t1 medium sweet potato, diced<br \/>\n\t2 cups green beans, cut in 1-inch pieces<br \/>\n\t1 zucchini, sliced<br \/>\n\t1 yellow squash, sliced<br \/>\n\t1 16-ounce can chick peas, undrained, or 2 cups cooked<br \/>\n\t2 ears corn cut in 1-inch pieces or 1 cup corn kernels<br \/>\n\t2 tablespoons lime juice<br \/>\n\t1 cup cilantro or Italian parsley leaves, chopped; additional for garnish if desired<br \/>\n\tCooked brown rice or other whole grains (optional)<\/p>\n<p>\n\tHeat the olive oil in a large pot and add the onion, red and green peppers, garlic; saute until the vegetables are soft, about 5 minutes. Stir in the bouillon, spices, red potatoes and sweet potato. Bring to a boil, reduce the heat and simmer, covered, for about 15 minutes or until the potatoes have softened.&nbsp; Add the green beans, zucchini and yellow squash, chick peas, corn and lime juice.
