{"id":314,"date":"2013-06-07T03:43:00","date_gmt":"2013-06-07T03:43:10","guid":{"rendered":"https:\/\/drmirkin.com\/2013\/06\/07\/shrimpcurry\/"},"modified":"2020-02-26T01:07:12","modified_gmt":"2020-02-26T01:07:12","slug":"shrimpcurry","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=314","title":{"rendered":"Quick Shrimp Curry"},"content":{"rendered":"<p><em>Note: This was one of my mother&#8217;s favorite easy recipes<\/em>. \u00a0<em>Look in the Asian section of large supermarkets for interesting ingredients such as curry paste, lime pickle, and coconut milk.<\/em><\/p>\n<p>4 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n1 tablespoon mild curry powder or 2 tablespoons mild curry paste<br \/>\n1 16-ounce bag frozen mixed peppers and onions<br \/>\n1 16-ounce bag frozen mixed oriental vegetables<br \/>\n1 pound frozen cooked shrimp, or frozen mixed seafood<br \/>\n1 14-ounce can coconut milk or 2 cups of plain yogurt<br \/>\nCooked barley, brown rice or other whole grains of your choice<br \/>\nSpanish redskin peanuts or pine nuts (optional)<\/p>\n<p>Bring the bouillon to a boil in a large pot. Stir in the curry powder and frozen vegetables. When they are soft, add the frozen shrimp or mixed seafood. Cook about 5 minutes to blend the flavors. Stir in the coconut milk and heat through.
