{"id":316,"date":"2013-06-07T05:48:00","date_gmt":"2013-06-07T05:48:44","guid":{"rendered":"https:\/\/drmirkin.com\/2013\/06\/07\/quinoapilaf\/"},"modified":"2013-06-07T05:48:00","modified_gmt":"2013-06-07T05:48:44","slug":"quinoapilaf","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=316","title":{"rendered":"Quinoa-Mushroom Pilaf"},"content":{"rendered":"<p>\n\t1 12-ounce box quinoa<br \/>\n\t5 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a>&nbsp;or water<br \/>\n\t2 tablespoons olive oil<br \/>\n\t2 onions, chopped<br \/>\n\t1 red bell pepper, chopped<br \/>\n\t3 8-ounce boxes sliced mushrooms<br \/>\n\t1 teaspoon oregano<br \/>\n\t2 teaspoons mild chili powder<br \/>\n\t1\/2 cup chopped pecans, slivered almonds or other nuts of your choice (optional)<br \/>\n\tFreshly ground pepper, to taste<br \/>\n\tLemon wedges (optional)<\/p>\n<p>\n\tBring the bouillon or water to a boil in a pot, stir in the quinoa and return to boiling. Reduce the heat, cover and simmer for 10-15 minutes, or until the liquid is absorbed and the quinoa is transparent and tender. Do not cook too long or it will get mushy.<\/p>\n<p>\n\tMeanwhile, in another pot, heat the olive oil and saute the onions and pepper until they are soft, about 5 minutes. Stir in the mushrooms, oregano and chili powder, cover and cook until the mushrooms are soft, 5-10 minutes.<\/p>\n<p>\n\tWhen the quinoa is cooked, stir it into the mushroom mixture.
