{"id":317,"date":"2013-06-07T05:49:00","date_gmt":"2013-06-07T05:49:47","guid":{"rendered":"https:\/\/drmirkin.com\/2013\/06\/07\/ratatouille\/"},"modified":"2024-03-31T20:12:24","modified_gmt":"2024-04-01T00:12:24","slug":"ratatouille","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=317","title":{"rendered":"Ratatouille with Baby Potatoes"},"content":{"rendered":"<p>2 onions, halved lengthwise and sliced<br \/>\n1\/2 cup <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n1 28-ounce can Italian plum tomatoes, undrained, broken up<br \/>\n2 teaspoons oregano<br \/>\npinch cayenne, or to taste<br \/>\n1 teaspoon grated lemon rind<br \/>\n1 pound baby red potatoes, scrubbed (not peeled) and cut into bite-size pieces<br \/>\n4 medium zucchini, quartered lengthwise, then sliced into 1&#8243; pieces<br \/>\n10 black olives (deli-style if possible), sliced<br \/>\nlemon wedges<\/p>\n<p>Bring the onions and bouillon to a boil and simmer 5 minutes. Add the tomatoes, spices, lemon rind and potatoes and cook 10-15 minutes or until the potatoes are just tender. Stir in the zucchini and olives and cook 5 minutes more, or until the zucchini is crisp-tender but still bright green. Garnish with lemon wedges.
