{"id":364,"date":"2013-06-21T03:11:00","date_gmt":"2013-06-21T03:11:43","guid":{"rendered":"https:\/\/drmirkin.com\/2013\/06\/21\/roastveg\/"},"modified":"2013-06-21T03:11:00","modified_gmt":"2013-06-21T03:11:43","slug":"roastveg","status":"publish","type":"post","link":"http:\/\/drmirkin.com\/?p=364","title":{"rendered":"Roasted Veggie Soup Starter"},"content":{"rendered":"<p>\n\t<i>If you do this 3 or 4 times a year, you will always have the makings of great soups, veggie stews or chili on hand.<\/i><\/p>\n<p>\n\t<b>Your choice &#8212; any or all:<\/b><br \/>\n\tOnions<br \/>\n\tCelery<br \/>\n\tPeppers-red, green<br \/>\n\tCarrots<br \/>\n\tFennel<br \/>\n\tTurnips<br \/>\n\tGarlic<br \/>\n\tPotatoes<br \/>\n\tSweet potatoes<br \/>\n\tWinter squash<br \/>\n\tMushrooms<br \/>\n\tetc.<\/p>\n<p>\n\tPreheat oven to 400 degrees.<\/p>\n<p>\n\tSlice or chop all the vegetables into about &frac12;&quot; pieces. Pile into a large roasting pan. Roast, uncovered, about 1 hour, stirring occasionally.<\/p>\n<p>\n\tScoop the roasted veggies out of the pan and divide them into 2-3 cup freezer containers. Press down to squeeze out most of the air. Place those you can use in the next week in the <a href=\"https:\/\/drmirkin.com\/recipes\/roastveg.html#\" id=\"FALINK_2_0_1\">refrigerator<\/a> and prepare the remaining ones for freezing as follows:<\/p>\n<p>\n\tPut the roasting pan on the stovetop and add <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a> to loosen the browned bits from the pan. You will need about 1 cup of bouillon for each container of veggies you plan to freeze. Bring the bouillon to a boil, then ladle enough into each container to just cover the veggies.
