{"id":1289,"date":"2013-06-08T01:03:54","date_gmt":"2013-06-08T01:03:54","guid":{"rendered":"https:\/\/drmirkin.com\/recipes\/gardensoup.html"},"modified":"2020-06-01T22:38:24","modified_gmt":"2020-06-01T22:38:24","slug":"gardensoup","status":"publish","type":"post","link":"https:\/\/drmirkin.com\/?p=1289","title":{"rendered":"Spicy Garden Pea Soup"},"content":{"rendered":"<p>6 cups <a href=\"https:\/\/drmirkin.com\/recipes\/stock.html\">bouillon<\/a><br \/>\n2 onions, chopped<br \/>\n3 cloves garlic, pressed<br \/>\n1 teaspoon grated fresh ginger root<br \/>\n1 teaspoon ground coriander<br \/>\n1 teaspoon ground cumin<br \/>\n1 teaspoon ground turmeric<br \/>\npinch cayenne, or to taste<br \/>\n1 sweet potato, peeled and diced<br \/>\n2 cups canned Italian plum tomatoes, undrained, broken up<br \/>\n4 cups fresh or frozen green peas<br \/>\nFreshly ground black pepper<\/p>\n<p>Bring the onions, garlic, seasonings and bouillon to a boil in a large pot. Reduce the heat and simmer for 5-10 minutes while you cut up the sweet potato. Add the sweet potato and tomatoes, return the pot to a boil, reduce the heat again and simmer 20-30 minutes, until the sweet potato is tender. Use a hand blender to thicken the soup a little, if desired, but leave plenty of chunks. Add the peas and cook until they are tender, about 5 minutes for fresh, almost instantly for frozen peas.
