Mediterranean Clams and Beans


1 large onion, chopped
1 red bell pepper, chopped
1 cup bouillon
1 cup white wine (optional; substitute more bouillon if you wish)
2 cups canned tomato sauce or crushed tomatoes
1 teaspoon oregano
1 clove garlic, minced, or 1 teaspoon garlic paste
pinch cayenne or Tabasco sauce to taste
1 16-ounce can small white beans or pink beans, drained
1 or 2 six-ounce cans chopped clams, undrained
1/2 cup chopped fresh basil
Cooked barley or other whole grains of your choice

In a large pot, cook the onion and the pepper in the bouillon until soft, about 10 minutes. Add the remaining ingredients except the basil. Bring to a boil, reduce the heat and simmer 5-10 minutes to let the flavors blend. Stir in the basil and serve over cooked whole grains.
