1 cup orange lentils
6 cups bouillon
4 carrots, chopped
1 onion, chopped
2 garlic cloves, minced
2 teaspoons curry powder
pinch cayenne, or to taste
Bring all of the ingredients to a boil in a large pot and simmer for 30-45 minutes, or until the lentils and vegetables are tender. Mash the lentils or puree them with a hand blender if desired. This recipe works equally well with regular (brown) lentils or split peas, just a different color.
