Clam and Mushroom Sauce for Whole Grains or Spaghetti Squash

1 onion, chopped
2 cloves garlic, crushed
1/2 cup bouillon
1 28-oz. can tomato sauce
1 T. fresh oregano or 1/2 t. dried
1 bay leaf
1/4 t. hot pepper flakes
1/2 lb. mushrooms, sliced
2 6.5-ounce cans chopped clams
Freshly ground pepper
Cooked whole grains

Bring the onion, garlic and bouillon to a boil in a medium saucepan and simmer for 5 minutes. Add the tomato sauce and seasonings and simmer for 10 minutes. Add the mushrooms and clams with their juice and simmer 10 minutes.

Serve over whole grains or spaghetti squash, with ground black pepper to taste.

Enough sauce for 4-6 servings
